The Level One course is an introduction to the universe of cheese. You’ll learn the basics of cheese making, cheese aging, and cheese pairing and we will discuss the principles of cheese service and cheese tasting.
This is a perfect course for anyone working towards Academy of Cheese Associate Certification. As part of the course fee, you will have access to the Academy of Cheese online Learning Road and Level One exam (available in English language).
The courses will be delivered in a classroom (optimal) or virtual (to reach a wider geographical area), with a duration of 2 full days or 4 evenings. The course will be delivered in Italian, with appropriate English terminology added. The course will be divided into modules (history, ingredients, process, tasting, etc.), with a prominent focus on examining and tasting cheeses, with tailored wine and sake pairings.
