Join the Academy of Cheese and Brindisa’s Spanish cheese experts for an immersive tasting journey through the extraordinary world of Spanish cheese, hosted in Brindisa’s elegant Txoko space in Balham.

Across five carefully curated tasting flights, we’ll explore Spain through its cheeses – uncovering the history, culture, landscapes, traditions and techniques that have shaped one of Europe’s most diverse cheesemaking countries.

From the iconic Manchego PDO and powerful Picos Blue to distinctive goat’s cheeses, island specialities and exciting contemporary creations, this is an opportunity to taste your way across Spain while discovering the stories behind the cheeses.

Each flight will explore a different aspect of Spain’s cheesemaking story, combining guided tasting with history, context and insight.

Flight One: The Origins of Spanish Cheese

Journey back to the earliest days of cheesemaking in Spain, from evidence of pre-Roman cheese through Roman, Arabic and Christian influences.

Flight Two: Regions, Landscapes & Traditions

Your Hosts

Matthew Onuki Luke

Matthew brings nearly a decade of London cheesemongering experience to the role. He began at Paxton & Whitfield’s Jermyn Street shop before joining Buchanans Cheesemonger, where he honed his affinage skills and developed a passion for selecting and ageing young cheeses to his precise standards. His work gave him deep, sometimes delightfully niche, knowledge across cheese styles — supplying cheeseboards to Michelin-starred restaurants and collaborating closely with UK cheesemakers, including making cheese at several dairies.

A cheese-awards judge and active voice in the artisan community, Matthew relocated to Plymouth in 2025 and now brings his expertise and enthusiasm to the South West.

James Robinson, Product Trainer

James has more than 25 years of experience educating customers and colleagues on the varied cultures, landscapes and exceptional foods of Spain. He has a deep knowledge of regional Spanish ingredients and culinary traditions and is the go-to on pairings for artisan Spanish cheese. James has also been a judge at the Great Taste Awards for many years.

We reserve the right to cancel an event should circumstances beyond our control make this unavailable or if minimum numbers are not met. In the unlikely event of this happening, delegates will be offered a place on the re-scheduled date, or given a full refund. Please note once tickets are booked, they are non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date.
