Gilles Quillot is the French Embassy Head Chef and is passionate about the history and tradition of fermented bread. Gilles has a wealth of experience in baking and takes great interest in the route from field to oven. He has spent a long time with the farmers to select the most ancestral wheat quality and to protect the nutritional values of bread.
Together with Noemie Richard, Maitre fromager and Academy of Cheese trainer, they will reveal the “savoir faire” of bread making and talk us through their recommendations for pairing cheese and bread.
