About.

Paul Thomas is a freelance technical consultant specialising in dairy technology and food safety. As a training provider has delivered courses and webinars on behalf of the School of Artisan Food, River Cottage, Food Centre Wales and Food Technology Centre Wales, Food Standards Agency, Food Standards Scotland and Dairy Australia. He was one of the co-authors of the European Guide to Good Hygiene Practices in the Production of Artisan Cheese and Dairy Products for the European Commission DG Health & Food Safety and has contributed articles on food safety and cheesemaking to several publications. His book, Home-made Cheese was published by Lorenz Books in 2016. Paul project-managed the initial development of the standards and learning outcomes for the Academy of Cheese.
