Join Academy Training Partner and award-winning cheesemonger Jen Grimstone-Jones, for a look at the world of cheese making through the lens of the Academy of Cheese Make Post-make Model.

But what exactly is the Make Post-Make model? With so many different varieties of cheeses, the Academy’s cheese classification model groups cheeses according to similarities in their production, rather than appearance alone. It is at the heart of our materials and allows students, professionals and cheese fans to anticipate a cheese’s appearance and flavour, based almost entirely on these classifications. 

In this 45 minute class, we’ll taste through a range of styles from the Level One Cheese Library and look at the technology and processes that transform simple milk into such a wide variety of cheese.

This Guided Session involves tasting and discussing cheeses. Not only is this an important part of the course, it is also a wonderful way to learn. However, it is not essential for you to have the exact cheeses in order to join the study group. The cheeses are not provided but have been chosen to be readily available at most delis, cheesemongers and supermarkets.

MEET THE HOST

JEN GRIMSTONE-JONES

An ex-sports therapist and International javelin thrower, Jen had a complete career change and now owns the award-winning specialist cheese shop, Cheese Etc, in Pangbourne. Jen was one of the first people to pass her Level 3 exams with the Academy of Cheese to become a Fellow of the Academy. She is also a Certified Cheese Professional with the American Cheese Society and a Cheese State Scholar with the Cheese State University, Wisconsin. A regular judge at the Artisan Cheese Awards, the International Cheese Awards and the World Cheese Awards, cheese is Jen’s passion. She has made it her mission to learn as much as she can about cheese and then pass that knowledge on to others.
