The course, run by the Bucks Cheese Guy, James Grant, is fun and informative. You will learn how cheese can be made both sustainably and ethically and discuss how beneficial real artisan cheese is as a wholesome food.
Level One is the first step to developing a greater understanding and appreciation of cheese by studying and tasting up to 25 cheeses. Develop your skills by learning a structured approach to tasting and a range to tools to communicate about cheese. Students will be taught in small groups and In this course, you’ll learn everything you need to know to take your Level One exam. Once you’ve passed it you will be an Academy of Cheese Associate. You will learn the correct way to taste cheese, how to present it, how it’s made and much, much more.

One thing that has immediately changed as a direct result of James infectious passion is that I’ve started using “fancy” cheese for day-to-day uses. Maybe it’s a hangover from my upbringing but I always felt like it would be wrong to use a handcrafted, premium product to, say, make a toastie. That’s what Tesco’s own brand is for! But the day after the course finished I grated some of the leftover smoked cheddar into an omelette and it completely blew me away. It’s given me a whole new perspective on something that I previously saw only as a special treat, and for that I can’t thank you enough.

There was a lot to take in, however the online material provided an excellent reference for the items covered live, which could then be revisited at your own pace.

This was a fantastic course, which described comprehensively all the important topics related to cheese making while also providing good focus on the tasting of different cheese and explaining professional ways to assess cheese from an organoleptic point of view and record scores. The level 2 course provides a really good balance between online resources and face to face training sessions. The training was delivered by Patrick and Tracey and their knowledge, skills and expertise played a crucial part in making this a very informative and enjoyable course. Highly recommended!
