Academy of Cheese Level 1 introduces the essential cheese basics that every aspiring cheesemonger or junior industry professional should understand.

Learners explore how cheese is made, beginning with milk and the role of cultures, rennet and salt. They also learn how milk is produced, how cheese is matured, and why temperature, handling and storage matter. In addition, Level 1 includes practical industry knowledge, such as the chill chain, packaging, cutting, wrapping, serving and recognising the condition of soft mould-ripened cheeses.

A key part of the programme is learning how to describe cheese accurately. Level 1 introduces the important descriptors used across the Academy’s cheese education: country of origin, species of milking animal, vegetarian or animal rennet, raw or pasteurised milk, Make Post-Make class, protected status and age.

These descriptors are especially useful in a professional setting. They help a cheesemonger explain the difference between a generic Camembert-style cheese and Camembert de Normandie PDO, or compare a young pasteurised cow’s milk Cheddar with a mature raw milk clothbound example.

Understanding cheese through Make Post-Make

One of the most valuable tools introduced at Level 1 is the Academy of Cheese Make Post-Make model, often known as MPM.

The MPM model helps bring order to the diverse world of cheese. Rather than relying on vague or inconsistent terms, the model groups cheeses according to similarities in production. The “Make” describes how the curd or initial cheese is made, while “Post-Make” describes what happens to the cheese afterwards.

For example, Stilton is classed as a Crumbly cheese with Internal Blue Mould, while Gorgonzola Dolce is classed as Soft with Internal Blue Mould. Both develop blue veining during maturation, but their initial make gives them different moisture levels and textures.

At Level 1, learners are introduced to four Make classes: Soft, Crumbly, Hard and Hard-Cooked. This gives beginners a practical way to understand texture, moisture, maturation and handling.

Building confidence in tasting and communication

Level 1 introduces the Academy of Cheese tasting model, including the five simple flavours: sweet, acid, bitter, salty and savoury, or umami. Learners are expected to understand how to use the Level 1 Taste Model and interpret a completed tasting sheet.

This is particularly helpful for beginner cheese professionals. A customer may ask for “something nutty”, “a mild blue”, “a stronger Brie” or “a cheese that goes with cider”.
