This is far more than a classroom course. Alongside your Level Two studies, you’ll enjoy exclusive access to one of Britain’s most unique organic micro-dairies. Hosted by cheesemaker Becky Bain, you’ll experience truly natural cheesemaking from the very beginning, watching her create clabber starter cultures from her own certified organic raw milk, use traditional rennet-making methods, and transform milk into exceptional handmade cheese.
The Rare Dairy is the only certified organic, rare-breed Shetland cow-with-calf micro-dairy in the British Isles. Here, calves remain with their mothers, animal welfare comes first, and regenerative farming produces exceptional food in harmony with nature.

This course is organised and run by No2 Pound Street. Please note once the course is booked it is non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. The organiser (No2 Pound St) requires 14 days’ notice prior to original booking date. They reserve the right to cancel a course at short notice should events beyond their control make this unavoidable. Should this occur, delegates will be offered a place on the next available scheduled course or a full refund.

Yes, to be certified, candidates will need to take the Academy of Cheese® Level Two Member exam after completing the course. This exam is included in the course fee and is taken online, at home and at the convenience of the student. Candidates who successfully complete the exam will receive a certificate and badge.
