Following a 20-year career as a Human Resources Manager working with blue-chip and FMCG organisations in the U.K. and Ireland, Avril Molloy, Founder of the Irish School of Cheese decided to follow her passion for beautiful food, particularly the world of cheese, and changed her career path to become an expert in cheese. She initially trained as a Cheesemonger with Sheridan’s Cheesemongers, ultimately becoming a Retail Manager for nine Sheridan’s stores across Ireland.
The Irish School of Cheese offers a wide menu of services and training; teaching the renowned Academy of Cheese courses, designing bespoke cheese training and education programmes for food businesses, and giving masterclasses and cheese tasting experiences to cheese enthusiasts across Ireland.
Avril has successfully attained both Level 1 and Level 2 Academy of Cheese certifications and is the Academy’s first Training Partner in Ireland. Her goal is to deepen people’s understanding and appreciation of the beautiful and fascinating world of cheese, in a fun and enjoyable environment.
