Avril Molloy is one of the foremost experts in, and advocate for, artisan cheese in Ireland. She founded the Irish School of Cheese to share her knowledge and skills with cheese-lovers and food businesses who buy, sell or serve this natural, sustainable, food that represents terroir, age-old craft, food heritage and exceptional quality from farm to fork. Avril is particularly enthusiastic about Irish farmhouse cheese but loves to share her knowledge, expertise and stories of cheeses from all over Europe.
With twenty-five years’ experience as a human resources and training professional in blue-chip organisations in London and Dublin, Avril exchanged her corporate suit for jeans to train from the farm up as a Cheesemonger to follow her passion, artisan food. Having progressed to Retail Manager of Sheridan’s Cheesemongers Dunnes Stores business, Avril studied at The Guild of Fine Food and Paxton & Whitfield in London, to become the first Academy of Cheese Training Partner in Ireland. Avril now delivers cheese training for Bord Bia, La Rousse Foods, Gleneely Foods, cheese makers, wholesalers, luxury hotels and some of Ireland’s top restaurants.

Academy of Cheese Level 1 and 2 Certificate Courses: (Online or in person when Government restrictions allow). Study 25 to 100 iconic cheeses, with a particular focus on rinds, pastes, textures and flavours. You will learn how to confidently buy, care for, serve and pair cheese, bringing your knowledge and enjoyment to a new level.
From farming practices, the animals, the magical process of how cheese is made and matured, the courses are a glimpse into the historical, often quirky, rules, regulations and cheesemaking techniques in Ireland, the UK, the Alps and more.
Students are supported by an online study portal, Cheese Library and Academy cheese events. Take the exam online, at your convenience, and upon passing, receive a certificate and pin badge.
