The Irish School of Cheese was founded by Avril Molloy, an expert in farmhouse cheese and speciality food. She has attained both Levels 1 and 2 of the Academy of Cheese certifications. She studied with Paxton & Whitfield and The Guild of Fine Food in London to become the Academy’s first accredited Training Partner in Ireland.
Avril has delivered cheese education projects for Bord Bia, La Rousse Foods, Gleneely Foods and many other speciality food clients. Previously, she was Retail Manager for one of Ireland’s most renowned speciality food businesses, Sheridans Cheesemongers. Avril is particularly enthusiastic about Irish farmhouse cheese but loves to share her knowledge, experience and stories of cheeses from all over Europe.
The Irish School of Cheese training programmes are suited to anyone who loves cheese whether for consumers or any business that buys, sells or serves speciality farmhouse cheese. Training can be delivered on-site or online. Programs include:
Academy of Cheese Certificate Courses: (Online or in person). Academy of Cheese certificate Levels 1 and 2 for cheese professionals and consumers who love cheese. Study 25 to 100 iconic cheeses and behind the scenes of the world cheese industry, revise through the online study portal, take the online exam at your convenience.
