Anthony has completed certification programs in cheese and is a Member of the UK’s Academy of Cheese. He is working with local artisanal cheese producers on the BUY LOCAL initiatives and during his events and courses, do expect to stimulate your senses with the aromas and flavours of the cheeses and wines while enjoying listening to the stories and explore the people and culture behind each cheese in a fun and light hearted manner.
Anthony co-founded AYS, a WSET Approved Program Provider in wines, spirits and sake. During the tough times of the 20-21 pandemic, he co-founded Ferment, a wine restaurant and retail focusing on natural wines. He also established the Ferment webstore, making sure that quality boutique and artisanal fermented products of wines, craft beer, Japanese sake, specialty coffee, artisanal local and imported produced cheese and soya sauce is made accessible to consumers who share the same passion.
A professional trained mechanical engineer, Anthony is a holder of WSET Level 4 Diploma and is a Certified Wine Educator and Certified Sake Educator. He also holds the Cicerone Certified Beer Server certificate and numerous specialty coffee qualifications from the Specialty Coffee Association (SCA). A Malaysian native and having spent many years in Japan and Australia, Anthony believes that his passion has a SOUL in them, recently established the Ant & Knee brand to share the East meet West culture of tastings and pairings. He is also a great follower of the Natural Wines movement.
