What will I learn?
Our students can expect to receive a wide reaching introduction to the artisan/farmhouse cheese industry.
This will cover all aspects, from field to customer. There will be a particular focus on our own native and emerging Irish products.
The course will cover many aspects; agriculture, nutrition, production, and distribution. There will be a particular focus on tasting and evaluation.
Students will leave with the ability to confidently categorise and assess the quality of any cheese, using the skills they learn. These skills will be reinforced by a structured tasting of 25 cheeses, with help from their peers and trainer.

Meet Sheridans expert trainers:
Emilia has worked as a cheesemonger & sommelier since 2005 and managed the West of Ireland Sheridans Cheesemongers & wine bar for 5 years. She then moved to national retail management as Head of Retail for Sheridans Cheesemongers in 2018. This position is responsible for 19 outlets, made up of traditional shops, concession counters & walls (in partnership with Dunnes Stores) & our wine business; managing a team of retail managers and over 120 staff – Emilia oversees the retail development & management in Sheridans Cheesemongers and is a Specialist Food Industry Educator & Trainer.
Finbar has worked in the fine food industry for six years, quickly specialising in farmhouse cheese after meeting many producers and becoming fascinated by the process. He joined Sheridans as part of the expansion with Dunnes Stores, later becoming a store manager, then part or the national retail team. Finbar has completed qualifications in wine and olive oil evaluation training, along with building specialist dairy knowledge. He has developed direct relationships with many of the producers that we work with.
Please note once the course is booked it is non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date.
We reserve the right to cancel a course at short notice should events beyond our control make this unavoidable. Should this occur, delegates will be offered a place on our next available scheduled course or a full refund.
