From the rich pastures of County Tipperary, Cashel Farmhouse Cheesemakers has been crafting award-winning cheese since 1984. Founded by Louis and Jane Grubb at Beechmount Farm, Cashel created Cashel Blue, Ireland’s first farmhouse blue cheese, inspired by the quality of local grass-fed milk and the surrounding landscape near the Rock of Cashel.

Still proudly family-owned and run, Cashel combines traditional farmhouse methods with careful innovation. Milk is sourced from the Grubb family’s own herd and neighbouring farms, ensuring traceability, freshness, and strong ties to the local farming community. Each cheese is made and matured on site, allowing flavour to develop naturally and consistently.

Sustainability is embedded in how Cashel operates — from renewable energy use and reduced water consumption to biodiversity protection across the farm.
