The Poacher's Keeper
Tim Jones has been at the helm of Lincolnshire Poacher Cheese alongside his brother Simon for 28 years, crafting one of Britain's most celebrated artisan cheeses. Working from their family farm in Alford, Lincolnshire, the brothers have built a reputation for producing a clothbound, territorial-style cheese that draws comparisons to the great Alpine cheeses while remaining distinctly English in character.
Under Tim's stewardship, Lincolnshire Poacher has become a benchmark for British farmhouse cheese, made exclusively from the milk of their own Holstein herd. The cheese's complex, nutty sweetness and crystalline texture are the result of meticulous attention to traditional cheesemaking methods and careful maturation - often 14 to 24 months.
Beyond his work at the dairy, Tim has been a pillar of the British specialty cheese community. His two-decade tenure on the Specialist Cheesemakers Association committee, including five years as chairman, reflects his commitment to supporting and advancing the craft of artisan cheesemaking across the UK. Through this leadership role, Tim has championed the interests of small-scale producers, advocated for quality standards, and helped foster the next generation of cheesemakers.
Tim's approach to cheesemaking is rooted in patience, consistency, and respect for the land - values that have made Lincolnshire Poacher a fixture on the finest cheeseboards and in the most discerning cheese shops worldwide.
