Step inside the world of Wisconsin cheese through the story of Sartori – a family-owned creamery with four generations of passion, precision, and pioneering spirit woven into every wheel they make.

Hosted by the Academy of Cheese in partnership with Dairy Farmers of Wisconsin, this exclusive panel session brings together a Master Cheesemaker, a global brand strategist, and one of the world’s leading cheese educators for a conversation you won’t find anywhere else.

Discover what makes Wisconsin a world-class cheese region, why the milk behind Sartori’s BellaVitano® is as important as the culture that shapes it, and how a commitment to mentorship is securing the future of American artisan cheese.

Meet Pam Hodgson, one of the first women to attain the title Wisconsin Master Cheesemaker. Trace Sartori’s legacy and see why Wisconsin is a world-class cheese region. Follow their 4 generations steeped in tradition and heritage to the modern-day innovation and craftsmanship that defines specialty cheesemaking in the US.  Attendees will gain insight into Wisconsin’s dairy culture, cheesemaking excellence, and the people and values shaping its future.

Before the session, we will provide information on where to purchase Sartori cheeses in your area so you may experience the deliciousness during class. Please note that Sartori cheese may not be available in your area.
