About Hanna Lee

Bridging farmstead craftsmanship with retail expertise

Hanna Lee is a U.S.-based cheesemaker and speciality cheese professional whose career spans cheesemaking, retail management, and artisan product curation. She is currently a Seasonal Cheesemaking Assistant at Uplands Cheese Company in Dodgeville, Wisconsin, where she contributes to the production and affinage of raw milk farmstead cheeses. Her work includes adhering to strict food safety protocols, aging soft and firm cheeses, and managing direct-to-consumer and wholesale fulfillment.

Before joining Uplands, Hanna held several key roles in the specialty cheese sector. At Whole Foods Market in Boulder, Colorado, she worked as a Specialty Team Member, focusing on cheese preparation, quality control, and staff education on cheese tasting and provenance.

From 2022 to 2024, Hanna served as Market Manager at Dedalus Wine & Market in Boulder, where she curated a range of specialty products, oversaw daily retail operations, and developed artisan cheeseboards. Her leadership included staff training, product education, and operational management across food service and retail teams.

Earlier in her career, Hanna spent over three years with Whole Foods Market in Washington and Colorado, advancing from Specialty Team Trainer to Specialty Team Leader. In this capacity, she managed team operations, purchasing, and inventory for cheese and taproom departments, while maintaining high standards of customer service and quality control.

Hanna began her hands-on cheesemaking journey as a Creamery Intern at Asgaard Farm and Dairy in New York, where she gained foundational experience in small-scale goat cheese production and wholesale distribution.

A graduate of Oregon State University with a Bachelor of Science in Animal Science (Summa Cum Laude), Hanna combines academic and practical expertise in dairy and cheese. She is an Academy of Cheese Level 1 Associate and a two-time Cheesemonger Invitational Runner-Up (2023 & 2025).
