Cropwell Bishop Creamery

Cropwell Bishop Creamery is a family-owned cheesemaker in Nottinghamshire with more than 160 years of cheesemaking heritage. The Skailes family has produced cheese since the mid-19th century and today operates one of the few dairies licensed to produce PDO-protected Stilton, one of Britain’s most iconic blue cheeses.

Using milk sourced from local family farms, the creamery follows traditional methods such as hand-ladling curds and slow maturation to develop Stilton’s distinctive creamy texture and rich flavour. The dairy produces a range of cheeses including Blue Stilton, Organic Stilton, White Stilton, Blue Shropshire and Beauvale.

Cropwell Bishop’s cheeses regularly receive international awards and industry recognition, reinforcing its reputation as a leading British blue-cheese producer. As a major player in traditional cheesemaking, the creamery plays an active role in Affineur of the Year, as both cheesemaker and competitor.
