Academy of Cheese Setting new standards

Academy of Cheese are an impartial, not for profit organisation here to promote cheese knowledge, cheese education and careers in cheese. The Academy was set up to support Cheesemakers, with the aim of securing a thriving industry to operate in, with a captive audience of engaged consumers. A large part of the initial vision for the Academy was to create a world where cheesemaking can remain an aspirational way of life for many.

Academy courses educate both consumers and professionals through four levels of certification: from Level One, designed for fierce foodies as well as industry professionals up to Level Four Master of Cheese for the more serious curd nerds amongst us. The Academy is not only providing professional development for individuals but building greater respect for the industry as a whole, showcasing the skill, knowledge and talent of its members. In doing so, more career opportunities naturally develop, and the next generation of cheese professionals are inspired to get involved.

The Academy provides cheese education in six languages (with exams available in four) and champions cheese experts from 11 countries to deliver the courses as Academy of Cheese Training Partners. Through this opportunity they are expanding their businesses by creating new revenue streams, boosting their profile in the cheese community, and cementing their reputation as cheese experts.

He judges cheese and fine foods globally, serves as a senior trainer at the Guild of Fine Food, and collaborates with UK cheese wholesalers. As a Director of the Academy of Cheese, he crafted the Make-Post Make model and Standard Approach to Tasting Cheese.

Katy is an independent cheese making consultant and educator, holding external certifications in HACCP, Food Safety Management, and Internal Auditing, alongside specialised training in Dairy Hygiene. With over fifteen years of expertise in the cheese industry, including serving as a retail manager at Neals Yard Dairy, she has extensively collaborated with cheese makers and retailers in the UK and abroad.

Ros, Director of the Academy of Cheese, hailed as an "Icon of the Industry" by Speciality & Fine Food Magazine. Former MD at Paxton & Whitfield for 18 years, she led operations, online shop launch, and wholesale sales. Now, Ros consults on strategy, operations, and product range for cheese and retail businesses.
