Based in London, UK, Cián is a cheesemonger at Neal’s Yard Dairy (Borough Market shop), where he has worked since 2021. His career in cheese, however, began a year earlier at Sheridan’s Cheesemongers in Cork City, Ireland, where he first developed a passion for artisan and farmhouse cheeses.
