Academy of Cheese presents an evening of unconventional British cheese tales with The Cheese Bar’s Mathew Carver and Sam Wilkin.
Join us as Mathew will talk you through his mission to encourage people to ‘Eat More British Cheese’ followed by a tasting with Sam Wilkin, Head Cheesemonger at The Cheese Bar. Sam will give you an insight into the Academy of Cheese’s foundation course, walking you through how to taste six British Cheeses and what is best to pair them with.

The Academy of Cheese returns to WSET School London for the first in our new cheese and wine series: what grows together goes together.
This evening explores the stories and flavours of six French cheeses, paired with wines from the same region. Patrick McGuigan, cheese expert and trainer at the Academy of Cheese joins our own Lydia Harrison MW to take you on this delicious tour of different French regions.

The course will be taught by Max Melvin, a senior cheesemonger and educator who is part of the team’s tasting workshops and events in the shops and are available all through the year.
The course will be devoted to tasting cheeses at various stages of the ripening process, discussing & understanding the structured approach to tasting (SATC) & the Academy of Cheese proprietary cheese classification system, the Make-Post Make model.

During this fun, hands-on one-day course, you’ll learn a structured approach to tasting. During this fun and engaging tutoring, you’ll discover a structured approach to tasting and be introduced to a range of tools to help you communicate more effectively about cheese. You’ll learn how cheese is made, how to assess quality, develop an understanding of the provenance and range of cheese available.
