Championing artisan cheese from Ireland to Scotland
Tori McDonald began her career in cheese as a part-time cheesemonger at Mellis in Edinburgh during her final year at university. In this role, she gained experience in retail operations, product knowledge, and customer engagement, including hosting cheese and wine tastings and coordinating Meet the Maker events with producers such as Mrs Kirkham’s and Fen Farm Dairy,
After graduating, Tori spent time travelling, visiting cheesemakers and shops across Europe and Latin America. These experiences broadened her understanding of international cheesemaking practices and retail approaches. On returning to Edinburgh, she rejoined Mellis, taking on roles that included managing market stalls, preparing cheese platters for events, and assisting in the organisation of the Mellis Summer Fête.
In her current position, Tori focuses on wholesale operations, supporting delis, restaurants, and hospitality clients in developing and expanding their cheese selections. Her work includes advising on menu planning, sourcing artisan and farmhouse cheeses, and coordinating with suppliers across the UK and Europe. Notable projects have included supporting Michelin-starred restaurants and contributing to the development of the Gleneagles cheese trolley.
Tori continues to specialise in artisan and farmhouse cheeses, with a professional interest in traditional production methods, cheesemaking history, and the role of women in the industry.
