This one-day course (Saturday or Sunday, 9:00 AM–5:00 PM) provides a comprehensive introduction to the principles of cheesemaking, cheese history, and sensory evaluation.

Discover the fascinating history and craft of cheesemaking while learning the Academy of Cheese’s Structured Approach to Tasting Cheese (SATC). You’ll sample 12 of the 25 cheeses from the Academy’s Level One Cheese Library and explore several exceptional wine pairings, designed to enhance sensory understanding.

Upon completion of the course, participants will undertake a 30-minute online multiple-choice assessment at their own convenience. Results are provided immediately, with successful candidates receiving an official certificate and pin badge by post.

This internationally recognised certification is designed for individuals pursuing professional development in the food, beverage, and hospitality industries, as well as for educators and serious enthusiasts seeking a structured foundation in cheese appreciation.

Enrollment includes one year of access to the Academy of Cheese’s digital resources, including the Cheese Library and a catalogue of past webinars.
