Join author and expert Patrick McGuigan in London for a day of cheese tasting and learning, plus a special section on the art of cheese and wine matching. The Level One course is an introduction to the universe of cheese. You’ll learn the basics of cheese making, cheese aging, and cheese pairing. We’ll discuss the principles of cheese service and cheese tasting. You’ll get acquainted with the Make Post-Make classification model created by the Academy of Cheese.

The fun, interactive day course will be packed with information based on Patrick’s 15-year career in cheese, which has seen him visit and learn from the best cheesemakers, maturers and cheesemongers in the world.

Patrick also holds the WSET Level 3 and French Wine Scholar qualifications, so is excited to bring his love of curd and grape together with a special section during the class looking at perfect pairings. The day-long, classroom course will help prepare students for the Academy of Cheese Level One assessment (which students can take in their own time online).

The course will cover:

· How to taste cheese professionally
· Milk composition and cheese making
· Cheese maturation
· Cheese history
· Cutting, wrapping and storage
· Creating show-stopping cheeseboards
· PLUS: a special session looking at perfect pairings of cheese and wine

Students will taste 12 cheeses through the day, plus wine samples.

He writes about cheese for titles including The Telegraph, The Financial Times and Delicious, and has contributed to BBC Radio 4’s The Food Programme. I just did the level 1 introduction, taught by Patrick at WSET. What great fun! I came away inspired, as all great teachers do; Patrick brought the subject matter to life. I loved every moment of this course! I met great people from all over the world, with whom we still do online tastings, got to follow up from Level 1 with Patrick, really enjoyed his lessons and then, diving into the materials, went through such a complete cheese journey from all different kinds of aspects. As a food and travel writer with a love of cheese, this course was fabulous, I now know so much more about how cheese is made and the processes that the different cheeses go through to become their unique selves. Learning the skill and vocabulary of cheese tasting has been hugely informative and I’ve thoroughly enjoyed getting to know my first 25 cheeses. I now converse with cheesemongers in an entirely different way. Patrick’s online teaching style was a balance of friendly on-topic talk and nitty gritty information which aroused my curiosity to learn more. Thoroughly recommend.

Such a good introduction to the professional world of cheese. Really useful learning; with Patrick Mcguigan imparting his knowledge in a way that was easy to remember. Great course mates from around the world which gave the course an added dimension. Looking forward to Level 2.
