Designed for cheese lovers and food, retail and hospitality professionals across Southern California, this welcoming introductory course provides a foundation in cheesemaking, maturation, tasting, storage and service.

Delegates will learn the Academy’s Structured Approach to Tasting Cheese through a guided classroom tasting of 12 cheeses representing a variety of styles. They will also study the cheeses required by the Academy’s Level One curriculum.

Led by Academy of Cheese Fellow and international cheese judge Irene Clemente, the course combines recognized cheese education with practical industry insights and approachable small-group instruction.

Included in the price are the cheese for the course and access to the Academy of Cheese online resources and Level One exam.

Please note once the course is booked it is non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date. We reserve the right to cancel a course at short notice should events beyond our control make this unavoidable. Should this occur, delegates will be offered a place on our next available scheduled course or a full refund.
