Designed for cheese enthusiasts and industry professionals who have completed the Academy of Cheese Level One certification and want to deepen their knowledge. Level Two explores cheesemaking, maturation, cheese families, quality assessment, storage, service and the global cheese industry.

Delegates will strengthen their use of the Academy’s Structured Approach to Tasting Cheese through a guided classroom tasting of 35 cheeses. They will study all 75 cheeses in the Level Two Cheese Library and are encouraged to taste as many of the remaining cheeses as possible independently.

Led by Academy of Cheese Fellow and international cheese judge Irene Clemente, the course draws on her cheesemaking apprenticeship in France, international judging experience and professional training across the United States and Europe.
