The Level One Academy of Cheese Associate Certification course, held at The Courtyard Dairy, near Settle, will give you a greater understanding and appreciation of cheese. Delivered over one full day, the price includes cheeses to taste, refreshments and lunch provided by Ambry Bakery. The price also includes Academy of Cheese Delegate’s Study Pack, 12 month’s access to the online Learning Road and Exam.
The Course starts at 09:30am and will finish around 16:30 and will be lead by Simon Ferro, shop manager at The Courtyard Dairy and owner of Cheesemonger Ferro. Throughout the day you will get to taste 12 different cheeses with an introduction to the Academy’s own Structured Approach to Tasting.

The Academy of Cheese Level 1 course is an absolute joy. The course content was pitched perfectly: detailed enough to learn a lot of new things, but never overwhelming. It was also great to have a full library of study resources to use both before and after the course. Naturally, the cheese tasting was a big highlight, with a wonderful selection to try, and the ‘how-to’ element was explained really clearly. Simon was incredibly knowledgeable, engaging, and encouraging — perfect for me, a cheese enthusiast new to the language of cheese. I came away feeling like I had a solid understanding of how cheese is made, as well as a much better insight into the whole cheese industry, from farmer through to cheesemonger. It was also brilliant to chat to other attendees who, along with Simon, made the whole experience truly inspiring — and, dare I say, left me hungry for more!
I have nothing but positive things to say about the course and the thing that struck me most was Simon's obvious passion about the subject and enthusiasm to pass on his knowledge. Please note once the course is booked it is non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date. We reserve the right to cancel a course at short notice should events beyond our control make this unavoidable. Should this occur, delegates will be offered a place on our next available scheduled course or a full refund.
