Mike’s Fancy Cheese is an independent artisan cheesemaker based in Newtownards, County Down, founded by cheesemaker Michael Thomson. The business launched in 2013 following a successful crowdfunding campaign and focuses on small-batch raw-milk cheesemaking using milk sourced from nearby farms.
The company is best known for Young Buck, a Stilton-style blue cheese made with unpasteurised milk and aged for at least twelve weeks. Developed after Thomson trained at the School of Artisan Food and worked with established British cheesemakers, Young Buck quickly gained attention in the artisan cheese market and is now supplied to specialist retailers and restaurants across the UK and Europe.
With a strong focus on provenance and raw-milk craftsmanship, Mike’s Fancy Cheese represents a modern revival of traditional blue cheesemaking in Northern Ireland.
