Join us on Monday 9th March, from 9.45am – 12.45pm for a Level Three Tasting Experience like no other. Over the course of the afternoon, you’ll taste your way through approximately 12 exceptional British cheeses, brought together in a line-up rarely seen in one place. The tasting is split into five themed flights, each designed to celebrate incredible cheese through flavour and style whilst also giving you a unique preview of the Level Three Academy of Cheese Certification.

Renaissance – Journey through the British cheese renaissance and discover how tradition, innovation, and terroir reshaped our cheeses.

Modern British Cheese – Learn about the bold flavours, craft and creativity of the new cheeses on the block.   

Blind Blue Tasting – Put your learning to the test and see if you can use your newly acquired knowledge to place these mystery blue cheeses.

Your Hosts:

Matthew Onuki-Luke

Matthew brings nearly a decade of London cheesemongering experience to the role. He began at Paxton & Whitfield’s Jermyn Street shop before joining Buchanans Cheesemonger, where he honed his affinage skills and developed a passion for selecting young cheeses and ageing them to his precise standards.

His work gave him deep, sometimes delightfully niche, knowledge across cheese styles, and he supplied cheeseboards to Michelin-starred restaurants while collaborating closely with UK cheesemakers, including making cheese at several dairies.

A cheese-awards judge and active voice in the artisan community, Matthew relocated to Plymouth in 2025 and now brings his expertise and enthusiasm to the South West.

Ruth Raskin

Cheese Care & Quality Manager at The Fine Cheese Co.

With nearly 25 years in artisan cheese, Ruth’s passion was sparked at Daylesford, making cheese alongside Joe Schneider. Her career has since spanned retail, wholesale, and buying, leading to her current role at The Fine Cheese Co. overseeing all aspects of the company’s cheese: sourcing, curation, care, and training.

A regular judge at the World Cheese Awards and contributor to the Academy of Cheese Certifications, Ruth is driven by the human stories behind every cheese – the makers, the land, and the heritage. For her, cheese is a living story of place, people, and passion.

Cancellation Policy

We reserve the right to cancel an event should circumstances beyond our control make this unavailable or if minimum numbers are not met. In the unlikely event of this happening, delegates will be offered a place on the re-scheduled date, or given a full refund. Please note once tickets are booked, they are non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date. All speakers and cheeses are subject to change, depending on availability.
