About Liz Gibson

Exploring Wine & Cheese Together

Wine and cheese – two of my favourite things in the world. I love how one can change the other so much and create a whole new tasting experience. I also love talking to people.

Having spent 15 years running a country pub and restaurant with my husband and family, I decided I wanted to explore the world of wine in more detail and set about studying for my WSET Levels 2 and 3. Fast forward to 2024 when I took over Essex Wine School, where I
then discovered the Academy of Cheese. I completed my Level 2 Member Award in 2025, having spent time at Sparkenhoe Farm in Leicestershire, experiencing the cheese making +++process for myself, from raw milk to finished (delicious) matured wheel.

So many good conversations start over a cheeseboard and a glass of wine…Rind or no rind? Chutney? Maybe you’re a purist like me, I often don’t even need a cracker, just give me the cheese! There’s so much to try, so many electric combinations and there’s always
something to learn, so I’m excited to be able to bring this course to Essex and share my passion with you all.
