No2 Pound Street is an award-winning cheese and wine shop at the heart of the Chilterns, celebrated for its range of British artisan cheeses, English wines, and a British deli counter filled with exceptional produce. Behind the shop sits our dedicated training and tasting room — calm, comfortable, and purpose-built for learning. Your tutor, James Grant, founder of both No2 Pound Street and The Real Cheese Project, brings over two decades of experience in hospitality, cheesemongering and education. Known for his engaging, down-to-earth style, James makes learning about cheese both insightful and great fun.

Expect in-depth exploration, practical exercises, and guided tastings as you prepare for your Academy of Cheese Level 2 Member assessment. Refreshments and a light lunch will be provided each day.

Beautiful location , warm and friendly 2 days of great memories

Small group teaching 4 of us to 1 James but he coped with all questions ,made it fun but serious at the same time. Level 2 was a big step up from before – but it felt exciting and easy in James last capable hands. His knowledge and experience in the industry gave the course depth and perspective in a way you could never have just studying at home. The hands-on approach was great for being able to understand the theory in practice straight away as we got to make cheese at Stichelton Dairy.
