Established in London, the Academy of Cheese offers 4 Levels of Certification. This Level One course is currently offered in Calgary, Kelowna, New York City, Toronto, and Vancouver.

Enjoy a full day of guided tasting as you explore 12 benchmark cheeses and 6 classic wine pairings in a fun, relaxed classroom setting. Alongside the immersive in-person session, you’ll receive digital access to the Academy of Cheese Delegate Pack, including a detailed book covering the 25 cheeses featured at this level, plus tasting sheets. Your enrolment also includes 12 months of access to the Academy of Cheese Level One Learning Road and Cheese Library for ongoing study and reference.

When you’re ready to take the exam, you can schedule it at a time that works for you, within one year of registering. The open-book exam takes just 30 minutes, with instant results. Upon passing, you’ll receive your digital certificate and pin badge.

Fine Vintage is proud to bring two of the world’s leading cheese experts to guide you through your Academy of Cheese Level 1 course: Patrick McGuigan is the world’s leading writer in cheese with columns in The Sunday Times and author of 3 books on the subject; whilst Tracey Johnson has over 10 years experience making cheese, is a Certified Cheesemaker, and runs the largest Facebook group of cheesemakers in the world. This course also includes a focus on matching wine with cheese as both Tracey and Patrick are WSET certified in wine. You will need to bring your tasting glasses or purchase a set from us.

We do welcome many people from the food, wine and hospitality industry, especially those working in restaurants, retail and distribution. This is an introductory course and we presume no prior knowledge, but we do cater to the more advanced too. Our instructors are happy to answer questions throughout the day.
