Come and study cheese in Amsterdam! This one-day course, held at De Kaasserie’s West-Amsterdam cheese shop, is designed for professionals and enthusiasts alike. Taught by Paula Colchero, a cheesemaking expert, you will taste twelve cheeses from the list of 25 cheeses for Level one. These will be paired with drinks (wine, kombucha, tea) and analysed according to the Academy of cheese tasting and the make-post make model.
With 14 years of cheesemaking experience, Paula brings her extensive knowledge and artisanal approach to the fore, applying it to the Academy modules and helping you to understand the cheesemaking process with hands-on practical cheesemaking in her dedicated cheesemaking room.
All in all, each session will be a fabulous day of learning, socialising and enjoying the amazing world of cheese.
The Academy Of Cheese Level One Associate course is designed for professionals & enthusiasts alike. The course is devoted to tasting cheeses at various stages of the ripening process, discussing and understanding the structured approach to tasting (SATC) & the Academy of Cheese proprietary cheese classification system –
the Make Post-make model.
Paula also holds weekly cheesemaking workshops and brings her flair for creative design to each course.
Included in the course fee:
– Full-day classroom course delivered by a certified Academy of Cheese® training partner
– Tasting of 12 cheeses
– Learn about 25 different cheese styles
– Make two styles of cheese
– Copy of the level one cheese book detailing 25 different cheese styles

Yes, to be certified candidates will need to take the Academy of Cheese® Level One Associate exam after completing the course. This exam can be taken online, at home and at the convenience of the student. Candidates who successfully complete the exam will receive a certificate and badge - as well as the right to say they are qualified in cheese!

Please note once the course is booked it is non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date. We reserve the right to cancel a course at short notice should events beyond our control make this unavoidable. Should this occur, delegates will be offered a place on our next available scheduled course or a full refund.
