Urban Cheesemaking in Amsterdam
De Kaasserie was established to promote and explore the craft of making cheese. Thirteen years ago, the founder, Paula Colchero discovered she could make cheese at home, and fell in love with cheese making. De Kaasserie is the place where she brings together her love for design and food and invites others to do the same. Today she runs regular cheesemaking workshops and is a Training Partner for the Academy of Cheese.

It was a lovely afternoon learning a life skill that I can use and continue to enjoy for years to come. Paula is extremely passionate and patient about the learning process of cheese making! I highly recommend this workshop.
Great experience for a small or bigger group! We had fun and we have learnt a lot about cheese itself and the craft of making it! Paula is very engaging and has a very broad knowledge in her field that she shares in a very fun way. The studio is really spacious and the most importantly - cheese we have made were Delicious and the course was finished with a great cheese tasting with a glass of wine along with a nice conversation.
Loved it!!! My wife and I had a private cheese making class with Paula at her beautiful Amsterdam workspace. Paula was super friendly and personable from the moment we walked in the door. She made us feel at home immediately. Paula was very knowledgable about cheese making and a great teacher. Between making our own two soft cheese varieties we enjoyed tasting a wide range of cheeses and chatting with Paula.

Paula’s cheese making class was the most amazing experience! She did an incredible job of bringing us along on her personal journey while leaving room for us to learn and play. Not to mention the cheese was delicious. I would 200% take a class with Paula again (and probably will!).
