Our Bar’s Academy of Cheese Level One course is all about giving you the tools to go from a humble cheese lover to a verified cheese connoisseur.

Learn about how cheese is made, how to taste like a pro, and how to approach cheese pairing with The Cheese Bar’s maverick spirit.

We’ll cover everything from The Make Process and the art of the Affineur, to the history of cheese, but – ultimately – we’ll taste and enjoy lots of amazing cheeses – from the UK and beyond.

We’ll also learn how best to select and serve cheeses, as well as what to drink with them – so whether you’re looking to gain knowledge to use at work, or simply to impress your mates with on cheese & wine night, our course will have you living your best Cheese Life in next to no time!


The Important Stuff

Ours is a one-day course, taking place from 9.30am – 4.30pm (GMT), at our newest restaurant, The Cheese Barge – Paddington.

The Course will be led by our Head Cheesemonger, Sam Wilkin, who has a wealth of experience and knowledge to share.

The session will be fully interactive, with discussion encouraged and, most importantly, you’ll get to taste 10 of the delicious cheeses covered at Level One.

The course price includes lunch on the Barge: one of our classic Grilled Cheese Sandwiches with a glass of wine (or non-alcoholic drink of your choice!). Please do get in touch with any specific dietary requirements and we can chat about how best to accommodate these.

Please note: once the course is booked it is non-refundable. All bookings are final, however, if you are unable to attend you can reassign your booking to a new available date or to another person. We require 14 days’ notice prior to original booking date.

We reserve the right to cancel a course at short notice should events beyond our control make this unavoidable. Should this occur, delegates will be offered a place on our next available scheduled course or a full refund.

  • Understand the differences between large scale and artisan production

At Level One you are required to study and taste 25 iconic cheeses. You will find details on each cheese in your delegates pack and in the online Cheese Library. Whether you attend an online or classroom course you will be expected to have tasted the 25 cheeses on the Level One list by the time of your assessment.

Use the Structured Approach to Tasting Cheese (SATC) sheet to record your tasting notes.

Whichever way you chose to study, you’ll need to take the online exam to become a certified Academy of Cheese Associate. It’s 30 questions in 30 minutes, you’ve got this!
